Pizza Napoletana (One Dough, kitchen Stove)
Finally I was able to recreate the Napoletana Pizza at home. The recipe below will describe a one dough recipe. I will be posting a more generic recipe after some tests.
Ingredients
- 160g of 00 white flour
- 110ml of water
- 2g of yeast (dry)
- 5g of sault
- 2g of honey
How To Make It Happen
Now I will describe how the spell is made. First, we will create what we call a poolish and let it ferment.
To create the poolish we will get a bow (with a lead), add 100ml
of water and pour the 2g
of dry yeast and mix it until you get a consistent color ano no dry yeast remaining. Add 2g
of honey so that the yeast has something to eat while the fermentation is in process. Let it rest for 1h at room temperature (ideally 22
to 25
degree Celsius) and put it in the frige for 16
to 24
hours.
